Soft & Chewy Pumpkin Cookies!


Yum, I love anything pumpkin. Here are some soft chewy pumpkin cookies! Super easy and anyone can make and it will be a hit with your family and friends! 😉

  • 1 cupwhite sugar

1 tablespoonbutter

1egg, beaten

1 teaspoonvanilla extract

1 cuppumpkin puree

1/2 cupchopped walnuts

2 cupsall-purpose flour

1 teaspoonbaking powder

1/2 teaspoonsalt

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cream together sugar and butter. Add egg, vanilla, pumpkin and walnuts.
  3. Stir in flour, baking powder and salt; mix well.
  4. Drop by the tablespoon on cookie sheet and bake for 15 minutes.

CREAM CHEESE FROSTING:

2 (8 ounce) packagescream cheese, softened

1/2 cupbutter, softened

2 cupssifted confectioners’ sugar

1 teaspoonvanilla extract

Directions

  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.
