Pretzel toasted coconut chicken!?

Huh? Yeah, that is right a chicken pretzel. I totally just came up with this is my head when I was thinking about how bad I wanted some pretzels. Imagine if you used mashed up pretzels as a bread crumb instead regular bread crumbs? It would be like a pretzel chicken. And if you cut up the chicken into little bite size pieces, you could call is “Pop pretzel chicken” Anyways, I know it sounds crazy. I am sure someone has tried this before but I am going to try it out and if you do let me know what you think!

So what you would need to do is take a big bag of pretzels and mash them up but still leave a few good chunks! (Don’t make it dusty, you still want the crunch) And then for a little sweet to the chicken and a layer of shredded sweet coconut. Oh my gosh, my mouth is watering! I really think this would be amazing! It would be the perfect sweet/salty chicken mix but little bite size snacks!

THEN for the dip you can make a tzatziki sauce with cucumber and dill!¬† Am I the only one that thinks this sounds amazing? I can’t wait to try this!

Outfit looks to get inspired!

I love Pinterest for all the cute outfits you can find on there! It is craziness but amazing. Anways, I love to find outfit photos like this to get inspired and even print some out to take shopping with me. It is really fun to try to mimic the look but on a budget which is so much fun! So, print some out when you go shopping to get inspiration! You would be surprised how much it helps you keep focused when buying clothes, instead of a whole bunch of random pieces lol.

How to: Sock bun!

This trend is huge right now…and it is all over Pinterest which is where I found this picture. It’s a really easy and simple way to make the sock bun. I tried doing it and didn’t work well lol because my hair is like above my shoulders and too thin it didn’t work. But if you have medium to thick hair it should work well for you.

Different ways to use GREEK yogurt!

Greek yogurt is probably one of the best things for you out there in the dairy world. Me and April have a favorite brand which is FAGE or Chobani! Either one has great flavors and overall super declious. But if you buy the big tub of it and noticed that it keeps going bad because you can never finsih it, well here are some quick recipes you can whip up to use the rest of your greek yogurt so it doesn’t go to waste.

Greek Yogurt Pancakes:

Ingredients:
6 ounces of greek yogurt (I used Chobani non-fat plain)
1 egg white
1 tsp baking soda
1/2 cup of flour

Directions:
Mix the yogurt and egg white in a bowl. In a separate bowl, mix the flour and baking soda. Combine all ingredients together and cook like you would regular pancakes. I added blackberries to mine ūüôā Delicious! Flip them when they start bubbling on each side.

Makes about 3 medium pancakes!

Greek Tiramisu:

Mix the coffee and brandy in a shallow bowl.

    Quickly dip half the ladyfingers in the coffee mixture, turning to coat them but not so much that they get soggy.

    Arrange in one layer over bottom of your pan.

    Beat mascarpone with confectioners sugar until fluffy.

    Beat in yogurt and vanilla extract until well mixed with mascarpone.

    Spoon mascarpone yogurt mixture over the ladyfingers in pan and smooth the top.

    Sprinkle half the grated chocolate over the top.

    Dip the remaining ladyfingers in coffee mixture and arrange over the top.

    Sprinkle remaining chocolate evenly over the top of the ladyfingers.

    Chill for four hours or overnight.
    Greek yogurt cupakes:

    Ingredients:

    • 12 reduced fat vanilla wafers
    • 8 oz 1/3 less fat cream cheese, softened
    • 1/4 cup sugar
    • 1 tsp vanilla
    • 6 oz fat-free vanilla Greek yogurt (I used Chobani)
    • 2 large egg whites
    • 1 tbsp all purpose flour
    • 8 oz strawberries, hulled and sliced thin
    • 8 oz blueberries

    Directions:

    Heat oven to 350¬į.

    Line cupcake tin with
    liners. Place a vanilla wafer at the bottom of each liner.

    Gently
    beat cream cheese, sugar and vanilla until smooth using an electric
    mixer. Gradually beat in fat free yogurt, egg whites, and flour. Do not
    over beat. Pour into cupcake liners filling half way.

    Bake
    20-25 minutes or until center is almost set. Cool to room temperature
    then chill at least 1 hour in the refrigerator.

    Greek yogurt cucumber dill dip:

    Ingredients:

    • 3 tbsp. olive oil
    • 1 tbsp. vinegar
    • 2 cloves garlic, minced finely
    • 1/2 tsp. salt
    • 1/4 tsp. white pepper
    • 1 cup greek yogurt, strained
    • 1 cup sour cream
    • 2 cucumbers, peeled, seeded and diced
    • 1 tsp. chopped fresh dill

    Combine olive oil, vinegar, garlic, salt, and pepper in a bowl.  Mix until well combined.  Using a whisk, blend the yogurt with the sour cream.  Add the olive oil mixture to the yogurt mixture and mix well.  Finally, add the cucumber and chopped fresh dill.  Chill for at least two hours before serving.

    Garnish with a sprig of fresh dill just before serving.

    Zucchini Goat Cheese Tart:

    For the Crust:

    • 1 1/2 cups all purpose flour
    • 1/2 cup greek yogurt
    • 1/4 cup unsalted butter, cold, cut in 1/4 inch dice
    • 2 tablespoons ice water
    • 1/4 teaspoon salt
    • 2 tablespoons sesame seeds

    For the Topping:

    • 2/3 cup goat cheese, at room temperature
    • 1 teaspoon milk
    • 1 zucchini, cut into paper thin slices (preferably with a mandolin)
    • 1 tablespoon fresh thyme
    • 2 teaspoons fleur de sel
    • 1 tablespoon extra virgin olive oil

    Make Crust: Place flour, butter, yogurt, and salt in the bowl of a food processor. Pulse until butter is in pea sized pieces, about 10 pulses. Add ice water and pulse until flour is incorporated and dough comes together in a ball, about one minute. Cover dough in plastic wrap and let chill in refrigerator for 30 minutes.

      Preheat oven to 350¬įF. Line a baking sheet with parchment paper.

      On a lightly floured surface, roll dough out into approximately an 8 by 11 inch rectangle. Note: this tart is meant to be rustic, not perfectly shaped.

      Sprinkle dough with sesame seeds and lightly roll with rolling pin to embed seeds into crust.

      Place dough on a baking sheet. Prick dough all over with a fork. Cover dough with another piece of parchment paper and line with pie weights. Bake for 35 minutes, or until golden brown. Remove pie weights and let cool.

      Assembly: In a small bowl, combine goat cheese and milk. Whisk until goat cheese has a creamy consistency.

      Spread goat cheese evenly over crust. Lay zucchini over goat cheese, overlapping slightly, until completely covering crust. Sprinkle with thyme and fleur de sel. Drizzle with olive oil right before serving.

5 places you should visit in CA

Well, I live in CA and I really do love this state. It’s a much laid back and chill state, with a lot of cool things to check out. So if you are not from here and would like to visit someday or maybe you live in CA and never been to these places be sure to check them out. These are a handful of great places I think anyone that comes to CA should visit and see.


Hearst Castle:

There’s a lot to say about Hearst Castle, but I will keep it short! This is the most beautiful place ever! It is a huge mansion that was built by a very wealthy man way back when and this house is full of old antiques from so far back you wouldn’t believe it. There are two main pools, the one above is the one outside and it’s literally breath taking when you see it in person. The second pool is inside and looks amazing, it’s a bit smaller but the floor has flakes of REAL gold. This place just keeps going on and on and a MUST experience for anyone.

Famous Huntington Beach is a fantastic beach and a GREAT town. If you love surfing and surfer brands this is the perfect town and place to visit. It is a very chill town with loads of surfers and well known surfer brands. Topped with great places to eat and great views! The sand is so soft and the water is nice and clean. I grew up going to this beach and is a must see!

My husband and I just recently got back from coming to this beautiful place. If you love beautiful lakes and large mountains that could take your breath away, I would totally suggest here. I’d say this place is a little Colorado! If you love any kind of snow sports this is a great place to do that or even to learn. This was the first place I learned to snowboard. You wouldn’t believe how blue this lake water is. As you drive down more into the south part of lake Tahoe you can hit the Nevada Stateline and have one foot in CA and one in NV! It’s a pretty cool experience. It’s also an amazing place to kayak! And my personal favorite is swimming and camping! Fantastic place to camp!

Monterey has one of my favorite scenery. Another great place with beautiful water and rocks! The weather is always amazing. The sand is soft and the water is clean and awesome to get in. The aquarium is really popular in CA! It’s known for amazing tanks of beautiful must see fish and even lets you touch sting rays! This is a great place for a family trip. And to have dinner looking over the water!

Built in 1937 this is the beautiful literally breathe taking Golden Gate Bridge in San Francisco! If you ever watched full house the TV show like I did you would always see this in the intro! This is a site to see. And everything in San Francisco is something everyone would have to see. This is one of my favorite cities! I love the weather which is always usually 68-70 degrees and the upbeat town. The water is beautiful, the city is breath taking, and this bridge is a must see. You can walk across it, ride your bike across it, or drive through it. Another great place for family and picnics! And riding bikes.
